                      The whole process of making tofu with tofu stone mill is commonly known as grinding tofu. Its traditional production process is as follows:
                      ①碾片脫殼:將干黃豆分批倒進(jìn)一臺土礱中碾壓,進(jìn)行脫殼,并使黃豆碾壓成片狀;
                      ① Milling and shelling: pour dry soybeans into a soil husk in batches for rolling, shelling, and rolling soybeans into flakes;
                      ②浸泡:使清水把已完成脫殼的黃豆片浸泡4~5個(gè)小時(shí);
                      ② Soaking: soak the shelled soybean slices with clean water for 4 ~ 5 hours;
                      ③磨豆漿:用人力轉動(dòng)一臺豆腐石磨,將清水和黃豆片磨成豆漿,通常由2人操作,即一人不停地轉動(dòng)豆腐石磨,一人根據轉速添加黃豆和水;

                      ⑤煮沸:將純豆漿倒進(jìn)一個(gè)大鼎,經(jīng)煮沸后裝進(jìn)一個(gè)按比例配以石膏水的木桶里,并用一支木槳攪勻,然后讓其冷卻凝結;
                      ⑤ Boiling: pour pure soybean milk into a tripod, boil it, put it into a wooden bucket with gypsum water in proportion, mix it well with a wooden paddle, and then let it cool and set;
                      ⑥加壓成形:取幾塊長(cháng)約60×60×4厘米的槽形木板,板面呈方格狀,并各墊上一塊白布,然后用貝殼瓢將已凝結的豆腐花舀到幾塊木板槽里,用槽里的白布蓋住,再壓上一塊木板和石頭,令其減少含水量并成形。一個(gè)多小時(shí)后,搬開(kāi)石頭和木板并將其反轉過(guò)來(lái),除去白布,一板乳白色呈方格狀的豆腐便新鮮出爐了。
                      ⑥ Pressure forming: take several pieces about 60 long × sixty × 4 cm trough shaped wood board, the board surface is in a square shape, and each is padded with a piece of white cloth. Then, use a shell ladle to scoop the condensed tofu flowers into several board slots, cover them with the white cloth in the slot, and then press a board and stone to reduce the water content and form them.
